Watershed is a triple-distilled, non-chill filtered single malt drawn from just six ex-bourbon barrels, a mix of first-fill and refill casks selected by malt master Stuart Nickerson, and it was the first whiskey cut to bottling strength with water from the farm's own source. It is bottled at 47% ABV and every bottle is individually numbered.The nose opens with strong vanilla and sweet fruit followed by hints of grain. On the palate, black pepper rises first, then is overtaken by vanilla fudge and a trace of raisin. The finish is smooth, warm and comforting, like honey on hot buttered toast.
