Contratto Fernet is a Piedmontese fernet from Contratto, the historic house founded in Canelli in 1867 and now owned by the La Spinetta winery. Unlike most fernets, it is built on a grape distillate made from estate-grown Barbera, infused with 33 herbs, spices, roots and seeds, including aloe, licorice, saffron, anise, fennel, ginger, mint, myrrh, juniper, nutmeg, cinnamon, rhubarb, quassia, clove and milk thistle. The botanicals are crushed in a hammer mill, cold-extracted over 35 days, lightly sweetened, colored with natural caramel and rested 40 days in steel. Bottled at 30% ABV in a 750ml bottle.The taste is bitter, minty and herbal with saffron warmth, licorice and a long, dry finish, softer and more elegant than the Milanese standard.
